Cheese matured pecorino, obtained according to a particular production procedure, represents one of the symbols of the dairy Sorano: cylindrical and straw color is characterized by the structure tenacious to the cut, for the semi-hard cheese with small holes and for the fragrant flavor that characterizes the entire range of the cured products.
